Cut salmon into evenly sized 1-inch cubes for even cooking
Pat the salmon dry to help it crisp properly
In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper
Add salmon cubes and gently toss to coat evenly
Optionally add cornstarch for extra crispiness
Heat a pan over medium-high heat or preheat air fryer to 390–400°F
Place salmon in a single layer without overcrowding
Cook for 3–4 minutes without moving to create a crust
Flip and cook another 3–4 minutes until golden and cooked through
Alternatively, air fry for 6–8 minutes until crispy
In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and soy sauce
Stir until smooth and creamy
Toss cooked salmon in half of the sauce or drizzle on top
Reserve extra sauce for serving
Garnish with chopped green onions or herbs
Serve immediately while hot
