Ingredients
  

  • 1 lb 450 g ground beef
  • 1 tablespoon 15 ml olive oil
  • 1/2 cup 75 g diced onion
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups 300 g cauliflower rice (fresh or frozen)
  • 1 cup 30 g fresh spinach, chopped
  • 1/2 cup 120 ml sour cream
  • 2 tablespoons 30 g butter
  • 1 1/2 cups 150 g shredded cheddar cheese
  • 1/2 cup 50 g mozzarella cheese
  • 1/4 cup 25 g grated parmesan cheese
  • 1/4 teaspoon garlic powder

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish
  2. Heat olive oil in a large skillet over medium heat
  3. Add diced onions and cook for 2–3 minutes until softened
  4. Stir in minced garlic and cook for 30 seconds until fragrant
  5. Add ground beef and cook until browned, breaking it apart evenly
  6. Season with Italian seasoning, paprika, salt, and pepper while cooking
  7. Drain excess grease to avoid a heavy casserole
  8. Add cauliflower rice to the skillet and stir well
  9. Cook for 3–5 minutes until slightly softened and moisture reduces
  10. Stir in chopped spinach and cook until wilted
  11. Add butter and sour cream, mixing until creamy and combined
  12. Sprinkle in half of the cheddar and mozzarella cheese and mix thoroughly
  13. Transfer the mixture evenly into the prepared baking dish
  14. Spread it out evenly using a spatula
  15. Top with remaining cheddar, mozzarella, and parmesan cheese
  16. Place in the oven and bake for 20–25 minutes until cheese is melted and bubbly
  17. Turn on broil for 2–3 minutes for a golden, slightly crispy top
  18. Remove from oven and let rest for 5–10 minutes before serving
  19. Garnish with fresh herbs if desired
  20. Slice and serve warm
