Ingredients
  

  • | Eggs | 8 large |
  • | Cottage cheese | 1 cup |
  • | Shredded cheddar or mozzarella | 1/2 cup |
  • | Cooked bacon or turkey bacon crumbled | 1/2 cup |
  • | Salt | 1/2 tsp |
  • | Black pepper | 1/4 tsp |
  • | Garlic powder | 1/4 tsp |
  • | Fresh parsley or chives optional | 2 tbsp |

Method
 

  1. Preheat your oven to 180°C (350°F)
  2. Lightly grease a muffin tin or use silicone liners
  3. Add eggs, cottage cheese, salt, and pepper into a blender
  4. Blend until smooth and creamy with no visible curds
  5. Pour the mixture into a bowl if needed
  6. Stir in shredded cheese and garlic powder
  7. Add cooked bacon or your preferred protein mix-ins
  8. Mix gently to evenly distribute ingredients
  9. Pour the mixture into muffin cups, filling about 3/4 full
  10. Sprinkle fresh herbs on top for added flavor
  11. Place the tray in the oven
  12. Bake for 20–25 minutes until the centers are set and tops are lightly golden
  13. Insert a toothpick in the center; it should come out clean
  14. Remove from oven and let cool for 5 minutes
  15. Carefully remove egg bites from the pan
  16. Serve warm or allow to cool completely for storage
  17. Optional: refrigerate before serving for a firmer texture
  18. Reheat in microwave for 20–30 seconds when ready to eat
