Ingredients
  

  • 2 large chicken breasts about 1 lb / 450 g, sliced in half horizontally
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ¼ teaspoon red chili flakes optional

Method
 

  1. Heat olive oil in a large skillet over medium-high heat
  2. Season chicken with salt, pepper, garlic powder, paprika, and Italian seasoning
  3. Place chicken in the skillet and sear for 4–5 minutes per side until golden
  4. Remove chicken from the skillet and set aside
  5. Reduce heat to medium and add butter to the same pan
  6. Add minced garlic and sauté for 30 seconds until fragrant
  7. Stir in sun-dried tomatoes and cook for 1–2 minutes
  8. Pour in chicken broth and scrape the bottom of the pan to deglaze
  9. Add heavy cream and stir continuously
  10. Let the sauce simmer for 3–4 minutes until slightly thickened
  11. Add Parmesan cheese and mix until melted and smooth
  12. Stir in fresh spinach and cook until wilted
  13. Return the chicken to the skillet and spoon sauce over it
  14. Let everything simmer together for 5–7 minutes
  15. Adjust seasoning with salt, pepper, or chili flakes
  16. Remove from heat once chicken is fully cooked and tender
  17. Let rest for 3–5 minutes before serving
