Heat olive oil in a large skillet over medium-high heat
Season chicken with salt, pepper, garlic powder, paprika, and Italian seasoning
Place chicken in the skillet and sear for 4–5 minutes per side until golden
Remove chicken from the skillet and set aside
Reduce heat to medium and add butter to the same pan
Add minced garlic and sauté for 30 seconds until fragrant
Stir in sun-dried tomatoes and cook for 1–2 minutes
Pour in chicken broth and scrape the bottom of the pan to deglaze
Add heavy cream and stir continuously
Let the sauce simmer for 3–4 minutes until slightly thickened
Add Parmesan cheese and mix until melted and smooth
Stir in fresh spinach and cook until wilted
Return the chicken to the skillet and spoon sauce over it
Let everything simmer together for 5–7 minutes
Adjust seasoning with salt, pepper, or chili flakes
Remove from heat once chicken is fully cooked and tender
Let rest for 3–5 minutes before serving
