Ingredients

  • | Lean ground beef | 1 lb 450 g |
  • | Taco seasoning | 2 tbsp |
  • | Water | 1/3 cup |
  • | Romaine lettuce chopped | 4 cups |
  • | Cherry tomatoes halved | 1 cup |
  • | Black beans drained and rinsed | 3/4 cup |
  • | Sweet corn kernels | 3/4 cup |
  • | Shredded cheddar cheese | 1 cup |
  • | Red onion finely diced | 1/4 cup |
  • | Nacho cheese Doritos lightly crushed | 2 cups |
  • | Sour cream | 1/2 cup |
  • | Fresh cilantro chopped | 2 tbsp |
  • | Lime juice | 1 tbsp |
  • | Salt | 1/4 tsp |
  • | Black pepper | 1/4 tsp |

Method

  1. Heat a large skillet over medium heat and add the ground beef. Cook the beef while breaking it apart with a wooden spoon until fully browned. Drain any excess grease, then add taco seasoning and water. Stir well and allow the mixture to simmer for about 3–4 minutes until thick and flavorful.
  2. Prepare the salad base in a large bowl. Add chopped romaine lettuce, cherry tomatoes, black beans, sweet corn, and diced red onion. Toss the ingredients gently so the vegetables distribute evenly throughout the bowl.
  3. Add the cooked taco beef on top of the salad mixture while it is still slightly warm. Sprinkle shredded cheddar cheese over the beef so it melts slightly. Then add crushed Doritos evenly across the salad for a crunchy texture.
  4. Finish the salad by adding sour cream, chopped cilantro, lime juice, salt, and black pepper. Toss everything gently or leave it layered for a taco-bowl presentation. Serve immediately so the Doritos stay crispy.
