Ingredients
  

  • | Cottage cheese | 1 cup |
  • | Eggs | 3 large |
  • | Banana optional, for sweetness | 1 medium |
  • | Vanilla extract | 1 tsp |
  • | Baking powder | 1/2 tsp |
  • | Cinnamon optional | 1/4 tsp |
  • | Salt | Pinch |
  • | Butter or oil for cooking | 1 tbsp |

Method
 

  1. Add cottage cheese, eggs, banana (if using), vanilla, baking powder, cinnamon, and salt into a blender
  2. Blend for 30–45 seconds until the mixture is completely smooth
  3. Let the batter rest for 5 minutes to slightly thicken
  4. Heat a non-stick skillet over medium-low heat
  5. Lightly grease the pan with butter or oil
  6. Pour small portions (about 2–3 tbsp) of batter onto the pan
  7. Cook for 2–3 minutes until bubbles form on the surface
  8. Carefully flip the pancakes using a spatula
  9. Cook the other side for another 1–2 minutes until golden
  10. Repeat with remaining batter
  11. Keep pancakes warm while cooking the rest
  12. Serve immediately with your favorite toppings
