Ingredients
  

  • | Beef sirloin or stew meat cubed | 1½ lb (680 g) |
  • | Baby potatoes halved | 1 lb (450 g) |
  • | Unsalted butter | 4 tablespoons |
  • | Garlic cloves minced | 4 cloves |
  • | Olive oil | 1 tablespoon |
  • | Paprika | 1 teaspoon |
  • | Dried thyme | ½ teaspoon |
  • | Salt | 1 teaspoon |
  • | Black pepper | ½ teaspoon |
  • | Fresh parsley chopped | 2 tablespoons |

Method
 

  1. Season the cubed beef generously with salt, pepper, paprika, and dried thyme. Heat olive oil in a large skillet over medium-high heat and sear the beef pieces for about 2–3 minutes on each side until browned.
  2. Add the halved baby potatoes to the skillet or slow cooker along with the seared beef. Toss gently so the potatoes begin absorbing the seasoned juices from the meat.
  3. In a small saucepan, melt the butter and stir in the minced garlic until fragrant. Pour the garlic butter mixture evenly over the beef and potatoes.
  4. Cook until the beef becomes tender and the potatoes are soft. Stir occasionally so everything becomes coated in the rich garlic butter sauce. Garnish with fresh chopped parsley before serving.
