Add the halved baby potatoes to the skillet or slow cooker along with the seared beef. Toss gently so the potatoes begin absorbing the seasoned juices from the meat.
In a small saucepan, melt the butter and stir in the minced garlic until fragrant. Pour the garlic butter mixture evenly over the beef and potatoes.
Cook until the beef becomes tender and the potatoes are soft. Stir occasionally so everything becomes coated in the rich garlic butter sauce. Garnish with fresh chopped parsley before serving.
