Ingredients
  

  • | Chicken breast boneless, cubed | 500 g |
  • | Olive oil | 2 tbsp |
  • | Lemon juice | 2 tbsp |
  • | Garlic minced | 3 cloves |
  • | Dried oregano | 1 tsp |
  • | Paprika | 1/2 tsp |
  • | Salt | 1/2 tsp |
  • | Black pepper | 1/2 tsp |
  • | Cooked rice or quinoa | 2 cups |
  • | Cherry tomatoes halved | 1 cup |
  • | Cucumber diced | 1 large |
  • | Red onion diced | 1/2 cup |
  • | Feta cheese crumbled | 1/2 cup |
  • | Lettuce or greens | 2 cups |
Tzatziki Sauce
  • | Greek yogurt | 1 cup |
  • | Cucumber grated, water squeezed | 1/2 cup |
  • | Lemon juice | 1 tbsp |
  • | Olive oil | 1 tbsp |
  • | Garlic minced | 1 clove |
  • | Fresh dill chopped | 1 tbsp |
  • | Salt | 1/4 tsp |

Method
 

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper
  2. Add chicken pieces and mix well to coat evenly
  3. Cover and marinate for at least 15–30 minutes for better flavor
  4. Heat a pan over medium-high heat
  5. Add marinated chicken and cook for 5–6 minutes on one side
  6. Flip and cook another 5–6 minutes until golden and fully cooked
  7. Remove from heat and let it rest for a few minutes
  8. In a separate bowl, prepare tzatziki by mixing yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, and salt
  9. Stir well until smooth and creamy
  10. Refrigerate tzatziki for at least 10 minutes for best flavor
  11. Prepare bowl base with rice, quinoa, or lettuce
  12. Add cooked chicken on top
  13. Arrange tomatoes, cucumber, and red onion around the bowl
  14. Sprinkle crumbled feta cheese
  15. Add a generous scoop of tzatziki sauce
  16. Optional: add olives or avocado for extra flavor
  17. Garnish with fresh herbs or chili flakes
  18. Serve immediately or pack for meal prep
