Preheat your oven to 200°C (400°F)
Line a baking tray with parchment paper
In a bowl, toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper
Spread evenly on the tray and roast for 20–25 minutes until tender
While potatoes cook, heat a skillet over medium-high heat
Add remaining olive oil and chicken pieces
Cook chicken for 5–6 minutes until lightly golden on one side
Flip and cook another 4–5 minutes until fully cooked
Remove chicken and set aside
In the same pan, add minced garlic and sauté for 30 seconds until fragrant
Add honey and soy sauce, stirring well
Mix cornstarch with water and add to the sauce
Cook until sauce thickens into a glossy glaze
Return chicken to the pan and toss to coat evenly
In another pan or pot, blanch or sauté green beans for 4–5 minutes until tender-crisp
Remove sweet potatoes from oven once golden and soft
Assemble bowls by adding sweet potatoes and green beans
Top with honey garlic chicken
Drizzle extra sauce over everything
Garnish with sesame seeds if desired
Serve warm and enjoy
