Ingredients
  

  • | Chicken breast cut into chunks | 500 g |
  • | Sweet potatoes peeled & cubed | 2 medium |
  • | Green beans | 2 cups |
  • | Olive oil | 2 tbsp |
  • | Garlic minced | 4 cloves |
  • | Honey | 3 tbsp |
  • | Soy sauce | 2 tbsp |
  • | Paprika | 1 tsp |
  • | Salt | 1/2 tsp |
  • | Black pepper | 1/2 tsp |
  • | Cornstarch | 1 tbsp |
  • | Water | 2 tbsp |
  • | Sesame seeds optional | 1 tbsp |

Method
 

  1. Preheat your oven to 200°C (400°F)
  2. Line a baking tray with parchment paper
  3. In a bowl, toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper
  4. Spread evenly on the tray and roast for 20–25 minutes until tender
  5. While potatoes cook, heat a skillet over medium-high heat
  6. Add remaining olive oil and chicken pieces
  7. Cook chicken for 5–6 minutes until lightly golden on one side
  8. Flip and cook another 4–5 minutes until fully cooked
  9. Remove chicken and set aside
  10. In the same pan, add minced garlic and sauté for 30 seconds until fragrant
  11. Add honey and soy sauce, stirring well
  12. Mix cornstarch with water and add to the sauce
  13. Cook until sauce thickens into a glossy glaze
  14. Return chicken to the pan and toss to coat evenly
  15. In another pan or pot, blanch or sauté green beans for 4–5 minutes until tender-crisp
  16. Remove sweet potatoes from oven once golden and soft
  17. Assemble bowls by adding sweet potatoes and green beans
  18. Top with honey garlic chicken
  19. Drizzle extra sauce over everything
  20. Garnish with sesame seeds if desired
  21. Serve warm and enjoy
