Ingredients
  

  • | Full-fat cream cheese softened | 225 g (8 oz) |
  • | Large eggs | 2 |
  • | Almond flour | 120 g 1 cup |
  • | Granulated keto sweetener | 50 g 1/4 cup |
  • | Cinnamon | 1 tablespoon |
  • | Baking powder | 1/2 teaspoon |
  • | Vanilla extract | 1 teaspoon |
  • | Salt | 1/4 teaspoon |
  • | Sugar-free sweetener for coating | 30 g 2 tablespoons |
  • | Ground cinnamon for coating | 1 tablespoon |
  • | Melted butter optional, for brushing | 2 tablespoons |

Method
 

  1. In a large mixing bowl, combine the softened cream cheese with the eggs, almond flour, keto sweetener, baking powder, vanilla extract, cinnamon, and salt. Use an electric mixer or whisk to blend the ingredients into a smooth, thick batter. The texture will be slightly sticky but workable — this forms the base dough for your roll-ups.
  2. Lightly dust your clean work surface with a bit of extra almond flour, then transfer the dough onto the surface. Using a rolling pin or your hands, press and roll the dough into a thin rectangle, about 1/4 inch thick. This shape makes it easy to roll and ensures even baking. If the dough sticks, sprinkle a touch more almond flour on top.
  3. Mix the sugar-free sweetener and extra cinnamon in a shallow bowl or small plate to create your cinnamon coating. Gently brush the surface of the dough with melted butter, then sprinkle the cinnamon-sweetener mixture evenly over the top. Starting from one long edge, carefully roll the dough into a tight log, pinching the seam to seal.
  4. Slice the dough log into bite-sized rounds and place them cut-side up on a lined baking sheet. Bake in a preheated oven until the roll-ups turn golden brown and crisp at the edges. Let them cool slightly before serving to allow the centers to set while maintaining their tender texture.
