  • 1 large egg
  • 1/4 cup 40 g finely chopped onion
  • 2 cloves garlic minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups 480 ml low-carb marinara sauce
  • 1/2 cup 120 g ricotta cheese
  • 1 cup 100 g shredded mozzarella cheese (for topping)
  • 2 tablespoons fresh parsley optional

Method

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish
  2. In a large mixing bowl, combine ground beef, mozzarella, parmesan, egg, onion, garlic, and seasonings
  3. Mix gently until ingredients are just combined, avoiding overmixing
  4. Shape the mixture into evenly sized meatballs
  5. Place meatballs into the baking dish in a single layer
  6. Bake meatballs for 15–18 minutes until partially cooked
  7. Remove from oven and carefully drain any excess grease
  8. Pour marinara sauce evenly over the meatballs, ensuring they are well coated
  9. In a small bowl, mix ricotta cheese until smooth
  10. Spoon dollops of ricotta evenly across the meatballs
  11. Sprinkle shredded mozzarella over the entire dish
  12. Return the dish to the oven and bake for 20–25 minutes
  13. Bake until cheese is melted, bubbly, and lightly golden
  14. Turn on broil for 2–3 minutes for a crispy top layer
  15. Remove from oven and allow to rest for 5–10 minutes
  16. Garnish with fresh parsley before serving
  17. Serve warm and enjoy
