Ingredients
  

  • 3 cups 400 g cooked turkey, diced or shredded
  • 1 tablespoon 15 ml olive oil
  • 1/2 cup 75 g diced onion
  • 1/2 cup 75 g sliced mushrooms
  • 1/2 cup 75 g chopped celery
  • 3 cloves garlic minced
  • 2 cups 300 g cauliflower rice
  • 1/2 cup 120 ml heavy cream
  • 2 large eggs
  • 1/2 cup 120 g sour cream
  • 1 cup 100 g shredded mozzarella cheese
  • 1/2 cup 50 g shredded cheddar cheese
  • 1/4 cup 25 g grated parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley optional

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish
  2. Heat olive oil in a large skillet over medium heat
  3. Add diced onion, celery, and mushrooms, cooking for 5–6 minutes until softened
  4. Stir in minced garlic and cook for 30 seconds until fragrant
  5. Add cauliflower rice and sauté for 3–4 minutes to reduce moisture
  6. Add cooked turkey to the skillet and mix everything evenly
  7. Season with thyme, paprika, salt, and pepper
  8. In a mixing bowl, whisk together heavy cream, eggs, and sour cream until smooth
  9. Stir in half of the mozzarella and cheddar cheese into the creamy mixture
  10. Combine the creamy mixture with the turkey mixture and stir well
  11. Transfer everything into the prepared baking dish
  12. Spread evenly using a spatula
  13. Sprinkle remaining mozzarella, cheddar, and parmesan cheese over the top
  14. Bake for 25–30 minutes until the casserole is set and cheese is melted
  15. Broil for 2–3 minutes for a golden, slightly crispy top
  16. Remove from oven and let rest for 5–10 minutes
  17. Garnish with parsley if desired
  18. Slice into portions and serve warm
