Ingredients
  

  • | Cottage cheese full-fat preferred | 1 cup |
  • | Eggs | 2 large |
  • | Blueberries fresh or frozen | 1 cup |
  • | Lemon zest | 1 tbsp |
  • | Lemon juice | 1 tbsp |
  • | Honey or maple syrup | 3 tbsp |
  • | Oat flour or almond flour | 1/2 cup |
  • | Baking powder | 1/2 tsp |
  • | Vanilla extract | 1 tsp |
  • | Pinch of salt | — |

Method
 

  1. Preheat your oven to 180°C (350°F)
  2. Lightly grease a muffin tin or use silicone molds
  3. Add cottage cheese, eggs, honey, lemon zest, lemon juice, and vanilla extract into a blender
  4. Blend until completely smooth and creamy
  5. Pour the mixture into a mixing bowl
  6. Add oat flour (or almond flour), baking powder, and salt
  7. Mix gently until combined into a smooth batter
  8. Fold in blueberries carefully to avoid breaking them
  9. Fill muffin cups about 3/4 full with batter
  10. Tap the tray lightly to remove air bubbles
  11. Place in the oven and bake for 18–22 minutes
  12. Check doneness with a toothpick; it should come out clean
  13. Remove from oven and let cool for 5–10 minutes
  14. Carefully remove from molds
  15. Optional: sprinkle extra lemon zest on top for flavor
  16. Serve warm or chilled
