Preheat your oven to 180°C (350°F)
Lightly grease a muffin tin or use silicone molds
Add cottage cheese, eggs, honey, lemon zest, lemon juice, and vanilla extract into a blender
Blend until completely smooth and creamy
Pour the mixture into a mixing bowl
Add oat flour (or almond flour), baking powder, and salt
Mix gently until combined into a smooth batter
Fold in blueberries carefully to avoid breaking them
Fill muffin cups about 3/4 full with batter
Tap the tray lightly to remove air bubbles
Place in the oven and bake for 18–22 minutes
Check doneness with a toothpick; it should come out clean
Remove from oven and let cool for 5–10 minutes
Carefully remove from molds
Optional: sprinkle extra lemon zest on top for flavor
Serve warm or chilled
