Method
- Whisk eggs with salt and pepper in a bowl
- Heat butter in a non-stick skillet over medium heat
- Pour a thin layer of egg mixture and swirl like a crepe
- Cook for 1–2 minutes until set, then flip gently
- Remove and repeat for remaining wraps
- Add cheese, spinach, bacon, and avocado to each wrap
- Let cheese melt slightly from residual heat
- Roll tightly like a wrap or burrito
- Slice in half and serve warm
