Ingredients
  

  • 4 large eggs
  • 4 strips bacon cooked and crispy
  • ½ cup fresh spinach
  • ½ cup shredded mozzarella or cheddar cheese
  • ¼ avocado sliced (optional)
  • 2 tablespoons cream cheese optional, for creaminess
  • 1 tablespoon butter or oil for cooking
  • Salt and black pepper to taste

Method
 

  1. Whisk eggs with salt and pepper in a bowl
  2. Heat butter in a non-stick skillet over medium heat
  3. Pour a thin layer of egg mixture and swirl like a crepe
  4. Cook for 1–2 minutes until set, then flip gently
  5. Remove and repeat for remaining wraps
  6. Add cheese, spinach, bacon, and avocado to each wrap
  7. Let cheese melt slightly from residual heat
  8. Roll tightly like a wrap or burrito
  9. Slice in half and serve warm
