Rinse rice thoroughly
In a pot, sauté onion and garlic until fragrant
Add rice and chicken broth
Bring to boil, then simmer for 15 minutes
Fluff and set aside
Season chicken with Cajun seasoning, paprika, garlic powder, salt, and pepper
Heat olive oil in a pan
Cook chicken on medium-high heat until golden and fully cooked (6–8 minutes)
Remove and set aside
In a bowl, combine yogurt, mayo, Cajun seasoning, and lemon juice
Mix until smooth and creamy
Adjust spice level if needed
Add rice as the base
Top with cooked Cajun chicken
Drizzle creamy sauce generously
Add veggies or herbs
Divide into containers
Store in fridge for up to 4 days
Reheat in microwave for 1–2 minutes
