Ingredients
  

  • 2 flatbreads or naan
  • 1 tbsp olive oil
  • ½ cup cherry tomatoes halved
  • ¼ cup black or Kalamata olives sliced
  • ¼ cup red onion thinly sliced
  • ½ cup shredded mozzarella cheese
  • ¼ cup feta cheese crumbled
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Optional: fresh basil or parsley

Method
 

  1. Preheat oven to a moderate baking temperature
  2. Place flatbreads on baking tray
  3. Brush lightly with olive oil
  4. Sprinkle mozzarella evenly over flatbread
  5. Add cherry tomatoes, olives, and onion
  6. Season with oregano, salt, and pepper
  7. Scatter feta cheese over toppings
  8. Bake until cheese melts and edges crisp
  9. Remove from oven and cool briefly
  10. Add fresh herbs if desired
  11. Serve warm
